This recipe produces two hearty servings of upscale burgers featuring layers of umami-rich mushrooms and a balanced sweet-savory sauce. The preparation accommodates multiple cooking techniques, including stovetop griddles, air fryers, and oven broilers, allowing cooks to choose based on their available kitchen equipment.

Heat your griddle to high temperature while simultaneously preheating an air fryer to 400 degrees Fahrenheit. Season four-ounce burger patties with mushroom powder, salt, and pepper, then sear them in oil for two to three minutes on each side until a golden crust develops.

Meanwhile, blend soy sauce, honey, and barbecue sauce—Chef Timon suggests Sweet Baby Ray’s brand—into a glaze mixture. This sauce will be brushed onto the burgers at multiple stages during cooking to build complex flavor layers.

In a separate skillet, heat remaining oil and cook a mushroom medley combining shiitake, oyster, and beech varieties alongside thinly sliced yellow onions. Sauté until the vegetables turn deep golden brown, approximately four to five minutes.

As the mushrooms and onions near completion, stir in fresh thyme leaves and unsalted butter. Continue cooking for one to two additional minutes, then season to taste with salt and pepper.

Move the seared patties to the air fryer or broiler to complete cooking, then brush with additional glaze. Layer each burger with cheese and the mushroom-onion mixture, then place on toasted brioche buns.

Serve with classic sides including chips, pickles, french fries, or a green salad.
