This elegant dish features delicate white fish prepared with an aromatic Asian-inspired sauce that balances savory and sweet flavors. The recipe serves multiple diners, with each person receiving six ounces of fresh local white fish as the protein foundation.

Begin by heating two tablespoons of neutral vegetable oil in a heavy skillet over medium heat. Sear the fish on one side until it develops a golden-brown crust, then remove it temporarily and set aside while keeping the pan hot for the sauce preparation.

Create the flavor base by stirring one tablespoon each of grated ginger and garlic into the hot skillet for approximately one minute. Combine one tablespoon each of light soy sauce, dark soy sauce, Chinese cooking wine, sugar, and Chinese black vinegar with one cup of chicken stock or water, then add this mixture to the pan.
