DiCosmo’s Italian Ice, a family-operated confectionery that has served customers since 1915, is preparing to enter the franchise market as it seeks to replicate its success across the United States. The company, which began as an unmarked neighborhood shop in Elizabeth, New Jersey, now operates from Metuchen and aims to establish locations primarily along the Eastern Seaboard and in warmer climates where year-round operations are feasible.
Owner Eileen O’Connor traces the business’s origins to her great-grandparents, Italian immigrants who settled in New Jersey and sought to recreate granita, a traditional Sicilian frozen dessert. During a particularly hot summer, O’Connor’s great-grandmother developed a recipe using hand-squeezed lemons and locally available fruits, establishing the foundation for what would become a multigenerational enterprise.
The formula has remained virtually unchanged for 111 years, relying on three basic ingredients: fruit, water and sugar. O’Connor personally hand-squeezes lemons and produces batches throughout the day to maintain the product’s signature smooth texture and prevent the formation of large ice crystals that would alter consistency.
Unlike mass-produced competitors, DiCosmo’s avoids stabilizers and emulsifiers that would allow the product to be frozen solid for extended retail shelf storage. This commitment to quality requires each franchise location to manufacture Italian ice on-site to preserve authenticity and maintain consistent flavor profiles across the expanding brand.
O’Connor, who inherited the business from her parents, emphasized that the company’s longevity stems from its unwavering dedication to quality ingredients and traditional methods. Since announcing franchise opportunities, the company has fielded multiple inquiries from prospective business owners interested in carrying forward the DiCosmo’s legacy.
