This classic Italian potato gnocchi dish combines tender dumplings with a silky cream sauce infused with lemon and fresh basil. The recipe serves as an elegant yet approachable option for home cooks seeking to master a traditional preparation. Both store-bought and homemade gnocchi work equally well for this preparation.
Begin by warming butter in a large, heavy-bottomed saucepan over medium heat until it melts. Introduce minced garlic to the pan and allow it to cook gently for approximately three minutes, stirring frequently to prevent browning. The objective is to soften the garlic while maintaining its delicate flavor profile.
Pour the heavy cream and chicken stock into the pan with the cooked garlic and bring the mixture to a rolling boil. Maintain a steady simmer for about eight minutes, allowing the liquid to reduce by half and concentrate in flavor. Incorporate the zest and freshly squeezed juice from one lemon to brighten the sauce.
While the sauce reduces, bring a separate pot of salted water to a boil for cooking the gnocchi. Add the potato dumplings in small batches and cook until they rise to the surface, roughly five minutes per batch. Transfer each batch directly into the warm sauce using a slotted spoon.
Finish the dish by stirring in torn basil leaves and three-quarters cup of grated Parmigiano Reggiano cheese. Season generously with kosher salt and freshly ground black pepper to taste, tossing gently to coat all components evenly. Plate and serve immediately while the sauce maintains its warmth and silky texture.
