Buttermilk Waffles2 cups all-purpose flour½ teaspoon baking soda1 teaspoon baking powder1 teaspoon kosher salt2 tablespoons granulated sugar3 large eggs2 cups good quality buttermilk4 tablespoons unsalted butter, melted and cooledIn a large bowl, whisk together the dry ingredients.In another bowl, whisk together the wet ingredients.Make a well in the center of the dry ingredients. Pour in the wet ingredients. Gently whisk together the ingredients. Do not overmix but don’t leave lumps either.Heat a waffle iron. Brush with a little oil or use cooking spray. Pour the batter into the waffle iron and spread it out a little to try and prevent overflow. Cook until golden.Serve with your favorite toppings. (We served our waffles with chocolate ganache, whipped cream and dried raspberries.
