Eggs In Purgatory3 tablespoons olive oil2 garlic cloves, minced¾ cup diced yellow onion, small diced3 cups of your favorite tomato sauceheavy pinch oreganoheavy pinch crushed chili flakes1 teaspoon salt, if desired6 eggs¼ cup grated parmesan cheese¼ bunch basilWe served our eggs with thinly sliced and toasted Italian bread.In a large skillet over medium-low heat, add the oil. Cook the onion and garlic until soft. Add the tomato sauce, oregano and chili flake. Season if needed.When hot, crack an egg in a small bowl; using a spoon make a well in the sauce and pour in the cracked egg. Repeat with the remaining eggs.Season with salt and pepper, cover and cook for about 4 minutes or until the whites are just set.Remove from the heat and top with parmesan cheese and basil.Serve with toasted bread.
